I’m not sure, but my guess because of the purple edges is eggplant.

The sweet potatoes are easy. In the skillet… almost looks like slices of the same. Can’t be squash…. unless it’s butternut squash, the part below the seeds…

They are exacatacally that—very large caps. I have the ports with sweet potatoes for lunch every day. Both are anti-inflammatory.

I wondered. I cut the stalks off and stuff the tops like that with them mashed with tomatoes and herbs but do them in the oven. Must try it in a skillet.
