  1. Haven’t had ratatouille in a long time but your photos make me think I’ll have to try it again. Mine ued to have more of a tomato base, it seems. but this looks delicious.

    • Just tomatoes. Grill or fry each veggie separately first and then put them together for the final cooking. It should have very little liquid when done. We learned how to make Ratatouille in cooking classes in the south of France.

  2. Never thought about adding lemon zest to roasted potatoes, it would certainly add flavour to the potatoes and the Ratatouille.

    • Hi Genie. The lemon zest and pepper give the taters a spicy edge that is really nice.
