I’m afraid of chiles. I rubbed my eyes once when I was chopping serranos. Big mistake. Huge. Now I stay away. I’m fond of Green Mountain Gringo salsa. I let them do the chopping, and I pay them handsomely for it. 🙂
I think all of us who chop chiles have rubbed our eyes at one time or another. It only takes one time, and then you can chop safely forever after that. The green chiles we get we handle with rubber gloves. They will make your hands burn if you do much handling of them without gloves.

I’m addicted to green chiles. I rarely eat hot sauce unless I make it myself. Commercial hot sauces are too salty.

Rubber gloves are an outstanding idea. And yes, I will remember the sensation of burning my eyes for the rest of my life.
